Created for the coronation of Queen Elizabeth II, coronation chicken or poulet reine Elizabeth is a cold dish consisting of poached and shredded chicken slathered in a mayonnaise-based, curry-flavored sauce. Originally it was served on one side of an oblong dish with a side of rice salad on the other. The rice salad is made with cooked rice, cooked peas, diced raw cucumber, and finely chopped mixed herbs, all combined with a seasoned French dressing. However, coronation chicken has lost much of its grandeur over the years, becoming a cafeteria staple and a sandwich filling. These days, recipes include other ingredients as well, most notably raisins, crème fraîche, and flaked almonds. But, no matter the version and the purpose, coronation chicken should always be served cold.
