  • raspberry syrup

    To make a raspberry syrup, you need raspberries, water, and sugar, in 2:1:1 ratio. Put the ingredients to a medium saucepan, then bring to a boil over medium heat. Wait until cool and store in a glass bottle. If refrigerated, it will keep for up to three weeks.
  • variations

    Older recipes will also add dry vermouth in the mix or even use vermouth instead of gin. Also, adding thyme to the cocktail works exceptionally well.
  • drinkware

    A cocktail glass is the drinkware of choice, but a coupe glass is also commonly used for this cocktail.
  • garnish

    Traditionally a clover club is not garnished, although a skewer of raspberries is often used as decoration.

Ingredients

1 Serving

4.5 cl (45 ml) (1 1/2) gin

1.5 cl (15 ml) (1/2 oz) raspberry syrup

1.5 cl (15 ml) (1/2 oz) fresh lemon juice

a few drops of egg white

Preparation

Step 1/4

Put all the ingredients into a shaker.

Step 2/4

Wait for 10 seconds then shake.

Step 3/4

Add the ice and shake once again.

Step 4/4

Double strain into a cocktail glass.
