1 pound fresh ground beef chuck
kosher salt and freshly ground black pepper
4 slices yellow American cheese
4 sesame seed hamburger buns
4 tbsp mayonnaise
4 tbsp ketchup
1 cup shredded iceberg lettuce
1 small onion, thinly sliced from pole to pole
16 crinkle-cut dill pickles
8 slices ripe beefsteak tomato
The first step is to prepare your grill and preheat it. To make the patties, divide the ground beef into four even balls and shape them into thin patties that are approximately a ½ inch wider than your buns.
Season the patties with salt and pepper and place them on a hot grill. Cook for two minutes, then rotate the patties 90 degrees and cook for another two minutes until the bottom and the sides are well-charred. Flip the patties, place a slice of American cheese on top of each, then transfer them immediately to the coolest part of the grill.
Toast the buns over high heat, and place each on a serving platter. Spread ½ tablespoon of mayonnaise and ½ tablespoon of ketchup on every bottom and top bun, then layer each bottom bun with lettuce, onions, pickles, and tomato.
Shortly reheat the burgers by placing them for 30 seconds on the hot side of the grill, then place them on top of the bottom buns. Cover with top buns and serve.
