Typically eaten for either lunch or dinner, cheese fries is an American fast-food item made with French fries which are topped with melted cheese and other various toppings such as bacon bits, grilled onions, and jalapeño slices. The cheese of choice is Cheddar cheese, but different cheese varieties can be used, the only requirement being that they are a good melting cheese. To prepare, all that is required is to pour the melted cheese (often mixed with other ingredients and spices), or a cheese sauce, over the fries. Alternatively, the cheese can be grated over the fries and then broiled until melted.

The following recipe gives instructions on how to prepare a version of cheese fries enriched with bacon. If you'd like to prepare a basic version of cheese fries, omit the bacon.
1 (28 ounce) package frozen French fries
3 slices bacon
1 cup shredded Cheddar cheese
Ranch dressing
Cook bacon in a skillet over medium-high heat for 10 minutes, turning from time to time. Place on paper towels to drain, then crumble.
Line a baking tray with aluminum foil, then arrange the fries in a single layer. Bake in the oven preheated to 400°F for 15-20 minutes, until crisp and golden brown.
While the potatoes are baking, preheat the broiler.
When baked, divide between three plates, sprinkle with cheddar cheese and crumbled bacon, and broil until cheese has melted, a minute or two.
Serve with Ranch dressing.
