Introduction & history

This Chilean sandwich is prepared by slicing open a sandwich bread (originally either marraqueta or frica bread), and filling it with grilled or pan-fried slices of beef steak (either flank steak, cube steak, or sirloin), chopped up chili pepper aji verde, lengthways sliced green beans, and tomatoes. The green beans are typically boiled but can be sautéed instead, and you can use any sandwich or hamburger bread that you have on hand, but in any case, don't forget to heat the bread before you assemble the sandwich. Although purists claim chacarero is made with only these ingredients, mayonnaise (or butter) is often included. In most restaurants, you will be given the option to choose whether or not you would like your sandwich to be made with mayonnaise, and — because it's after all mildly hot — whether or not you would like it to include the aji verde pepper. Cooking tips

  • mayonnaise

    There is an ongoing debate whether or not to use mayonnaise, but if you want to follow the traditional recipe, mayonaisse is a no go. However, more often then not, chacarero recipes do include either mayonnaise, or rarely butter, that is spread on bread.
  • additional ingredients

    Although this sandwich doesn't tolerate upgrades, feel free to use either an avocado spread or mayonnaise and slices of cheese.

The following is the traditional chacarero recipe. It has all the classic ingredients: marraqueta bread, beef steak, green banana pepper, green beans, and tomatoes. You can optionally add mayonnaise or butter, although these are not part of the traditional recipe.

Ingredients

1 Serving

1 sandwich bread; you can also use marraqueta bread, hamburger bread

220 gr of meat sirloin or round steak, cut in thin slices

4 slices of tomato

½ cup of cooked green beans, sliced lengthwise

1 tbsp of chopped green banana pepper

1 tbsp mayonnaise (you can use butter), optional

Preparation

Step 1/2

Heat a little oil in a frying pan. Season the meat with a little salt and then fry it on both sides for no more than two minutes per side.

Step 2/2

Slice open the sandwich bread, place the steak slices on the bottom of the bread, and top first with tomatoes, then green beans and then chopped green banana pepper. Cover with the bread top.
