Adapted from the gastronomy book Turkish Cuisine With Timeless Recipes, this recipe gives instructions on how to prepare the cacık dip the traditional way.
3 medium cucumbers
750g (1.6 lbs) yogurt
2 tsp salt
250 ml (1 cup + 1 tbsp) water
3 cloves garlic, crushed
3-4 sprigs dill, finely chopped
3-4 sprigs mint, finely chopped
30 ml (2 tbsp) extra virgin olive oil
Rinse the cucumbers in plenty of water. Peel the skins and grate coarsely.
Whisk the yogurt and then add salt, water, garlic, and cucumbers and mix thoroughly.
Serve the cacık in individual serving bowls garnished with dill and mint. Drizzle with olive oil.
