Buxton Blue

Buxton Blue is a cylindrical, blue veined, annatto/russet colored cheese made from cows' milk from Nottinghamshire, Derbyshire and Staffordshire, with a crumbly texture that becomes smoother as it ages. Its flavor is creamy with a hint of onions and dark chocolate on the finish.


The cheese should mature for ten to twelve weeks until it's ready for consumption, best accompanied with sweet dessert wines and used in salads or with fruit on a cheese plate. Unfortunately, Buxton Blue is no longer in production, although it has a PDO status.
