This simple dish is prepared by first separating the chicken wings at the joint into a drumstick and a flat. Then, the wings are deep-fried or baked in a hot oven until they turn golden brown and crispy. Originally, the wings are left unseasoned and uncoated with flour, although some recipe variations suggest doing so. The following step is to toss the wings into a hot sauce with some melted butter or margarine — or, even better, into special Anchor Bar Wing Sauce which is the authentic ingredient. The wings are tossed in the bowl until they are completely covered in sauce. 1 tbsp vegetable oil

1 tsp salt

1 cup (120g) all-purpose flour

THE SAUCE

1 1/2 tbsp white vinegar

1/8 tsp garlic powder

1/4 tsp Worcestershire sauce

1 tsp Tabasco sauce

1/4 tsp salt

6 tbsp Louisiana hot sauce (Frank’s Hot Sauce)

6 tbsp unsalted butter or margarine

THE BLUE CHEESE DRESSING

1 cup (240g) sour cream

1 cup (230g) mayonnaise

2/3 cup (150g) buttermilk

1 tsp Worcestershire sauce

1/2 tsp sugar

1/2 tsp dry mustard

1/2 tsp garlic powder

1/2 tsp ground black pepper

1/2 tsp salt

4 oz (120g) blue cheese (roquefort or gorgonzola), crumbled

Step 1/7

Preheat the oven to 425°F/220°C.

Step 2/7

Halve the wings at the joint if desired. Season with salt and oil, then coat evenly with flour. Shake off the excess flour.

Line the baking pan with foil and brush with oil. Arrange the wings on the baking pan. Bake for 20 minutes, turn over, and bake for 20 more minutes until the wings are browned on the outside and cooked through on the inside.

Meanwhile, prepare the hot sauce and the blue cheese dressing. To prepare the hot sauce, mix white vinegar, cayenne pepper, garlic powder, Worcestershire sauce, Tabasco sauce, Louisiana hot sauce, and butter or margarine in a pan. Bring to a simmer over low heat, stirring occasionally, and then remove from heat.

To make the blue cheese dressing, place sour cream, mayonnaise, buttermilk, Worcestershire sauce, sugar, mustard, garlic powder, salt, and pepper in a large bowl and whisk until smooth. Then, add crumbled blue cheese. If possible, refrigerate for 8 hours or overnight.
