Introduction & history

Brownies are a chocolate-rich dessert, as the name might imply, and are incredibly easy to prepare. Melted chocolate and butter are mixed with sugar, butter, eggs, cocoa, and flour into a smooth batter. Once the batter is baked, it is cut into squares or bars. There are countless brownie recipes with any number of variations, however even the most complicated is still relatively easy to make. There are two types of brownie — a fudgy brownie made with less flour, and a spongy, cake-like brownie with more flour and longer baking time. You can always adjust the basic recipe to your liking by adding various nuts, chocolate chips, and raisins to the batter, or by topping them with fixings of your choice.

The marbled brownies recipe makes brownies consisting of two differently flavored layers. The dark batter on the bottom and top is flavored with chocolate and chopped walnuts, but it’s cream cheese that adds flavor to the white batter placed in the middle.

DARK BATTER

225g (8 oz) plain chocolate

85g (1/4 cup + 2 tbsp) butter

4 eggs

300g (1 1/2 cup) sugar

140g (1 cup + 4 tsp) flour

½ tsp salt

1 tsp baking powder

2 tsp vanilla essence

115g (1 cup) walnuts, chopped

butter for greasing

LIGHT BATTER

55g (1/4 cup) butter, room temperature

170g (3/4 cup) cream cheese

100g (1/2 cup) sugar

2 eggs

30g (1/4 cup) flour

1 tsp vanilla essence

Step 1/5

Preheat the oven to 180°C/350°F, line a 33x23 cm (13x9-inch) baking tray with greaseproof paper, and grease it with butter.

For the dark batter, melt butter and chocolate over low heat while constantly stirring, then leave aside to cool. In a mixing bowl, whisk eggs until pale and light, gradually add sugar until well incorporated, and then fold in the sifted flour, salt, and baking powder. Now, stir in the cooled chocolate, vanilla essence, and walnuts. Set aside 450 ml (2 cups) of the mixture in a separate bowl.

For the light batter, cream butter and cream cheese with a mixer, add the sugar, and whisk until well blended; then, while whisking, incorporate the eggs, flour, and vanilla essence.

Pour the unmeasured chocolate batter into the baking tray, taking care that it's spread evenly. Then, pour over with the white batter, then drop the measured chocolate batter in spoonfuls. Using a metal pallet knife, swirl the layers so they marble, but do not let them blend. Bake in the oven for 35-40 minutes or when baked.

Take out of the oven and let cool, then take out from the baking tray, and for serving, cut into squares.
