"Biko is more than just a dessert—it’s a taste of home, tradition, and childhood memories. This classic Filipino sticky rice cake, made with glutinous rice, coconut milk, and brown sugar, is simple yet incredibly rich and satisfying. The chewy texture and deep caramelized sweetness make every bite comforting and nostalgic. For me, Biko holds a special place in my heart. I grew up eating it, lovingly made by my grandmother, and every time I have it, I’m reminded of the warmth of family gatherings and shared laughter with friends. There’s something magical about the way it brings people together, whether during celebrations or just an ordinary afternoon. What’s even more exciting is how Biko has evolved over the years. Many high-end restaurants have added it to their menus, incorporating creative twists that elevate it to the level of five-star desserts. From modern plating to unique flavor infusions, Biko is now getting the recognition it deserves as a world-class delicacy. While I’ll always cherish the traditional homemade version, it’s amazing to see how this beloved Filipino dish continues to shine in both humble kitchens and fine dining establishments. No matter where I am, a bite of Biko always brings me back home."
