"To say that Barbecue is a southern US dish would be correct but misleading. There are hard fought traditions along the southern states as to the correct way to prepare and even cook the meats. Some are dry and others saucy. Both have their advantages and unique flavors. A lot rests in the slow cooking process that tenderizes some of the "worst" cuts of meat. I'm a fan of Texas barbecue myself."
