Introduction & history

Bayerischer wurstsalat is a traditional German sausage salad originating from Bavaria.  It consists of Regensburger knockwurst pork sausages, onions, pickles, herbs, and a light dressing. This sausage salad is a staple at beer gardens and during Oktoberfest.

    If boiled Regensburger wurst is unavailable, it can be replaced with cooked bratwurst, beerwurst, kielbasa, mortadella, or bologna.

    As Bayerischer wurstsalat is a staple of beer gardens in the region, it’s recommended to pair it with local beer such as Marzen, Festbier, Munich Helles, Munich Dunkel, pilsner, and bock.
  • shelf life

    Although it’s best to enjoy this sausage salad shortly after it’s been prepared, it will keep for a day or two in the fridge when stored in airtight containers. The onions might lose some crispness, but overall the salad will retain its crunchy consistency.

    Once prepared, it’s recommended to serve the sausage salad with soft Bavarian pretzels, freshly baked bread rolls, pan-fried potatoes, or Bavarian kartoffelsalat (Bavarian potato salad).

This is the recipe for the traditional Bayerischer wurstsalat, which is made with Regensburger wurst, dill pickles, onion, chives, and parsley, and a dressing of wine vinegar, oil, pickle juice, salt, and black pepper.

Ingredients

340g (12 oz) Regensburger Wurst

3-4 dill pickles

1 red onion, small or medium-sized

chopped parsley, to taste

chopped chives, to taste

1 tbsp wine vinegar

1 tbsp pickle juice

2 tbsp vegetable oil

a pinch of salt

a pinch of black pepper

Preparation

Step 1/7

Remove the casings from the boiled Regensburger sausage, then cut it into thin slices or semi-circles.

Step 2/7

Cut the red onion into thin circles or semi-circles.

Step 3/7

Slice the dill pickles.

Step 4/7

In a small bowl, make the dressing by mixing the vinegar, oil, pickle juice, salt, and black pepper.

Step 5/7

Place the sliced sausages, onions, pickles, parsley, and chives in a deep bowl, then add the dressing and mix everything together. Make sure to reserve some parsley and chives for later.

Leave the sausage salad to marinate for 10 to 15 minutes.

Step 7/7

Serve the sausage salad in plates or bowls, then garnish it with chives and parsley.
