Introduction & history

Often nicknamed the poor man's burrito, baleada consists of a thick flour tortilla that is first spread with mashed refried red beans, then sprinkled with Honduran hard, salty cheese (queso duro) and topped with a dollop or two of mantequilla crema, a form of salty Honduran sour cream. The tortilla is then folded in half, and baleada is ready to serve. Tortillas are typically made only with flour, salt, baking powder, oil, and some type of liquid, either water, milk, or coconut milk. Alternatively, tortilla recipes can include eggs, sugar, and butter instead of oil. Depending on the region and the type of ingredients added to the tortilla, baleadas can be classified into three different subgroups.     Because the Honduran mantequilla crema can be hard to come by, to substitute, you can make your own version; mix two parts of sour cream with one part heavy cream. Also, feta cheese or mozzarella can replace queso duro in the original recipe.

This recipe is adapted from Honduras.com, a promotional website of the Honduran Chamber of Tourism. The recipe makes approximately 12 servings, two tortillas per serving. For the simplest baleada, fill the tortillas with mashed refried red beans, grated Honduran hard white cheese, and mantequilla crema, a form of Honduran sour cream.

Ingredients

4 cups (480g) flour

4 tbsp of oil or margarine

2 ½ tsp baking powder

1 tsp of salt

1/2 cup (120 ml) water, warm milk, or coconut milk

Preparation

Step 1/5

Combine all the dry ingredients in a large bowl, then gradually start adding the liquid while continuously mixing. The mixture will first turn into a paste, but keep kneading it until you get a soft dough.

Divide the dough into golf-sized balls and leave them to rest for at least 30 minutes.

Step 3/5

To prepare each tortilla, first, pat the dough with your hands to flatten it a bit, then stretch it further with a rolling pin.

Before placing it on a griddle, adjust the thickness by stretching it with your hands.

Cook it for two minutes over medium heat, and then flip it and cook for another minute on the other side.
