Cheesy, saucy, hearty, and filling, baked ziti is a classic of the Italian-American cuisine, a layered casserole consisting of, at its most basic, ziti pasta, tomato sauce, and three types of cheese: mozzarella, ricotta, and parmesan. The preparation starts with cooking the ziti pasta, usually only until halfway done since it will bake later as well. The tomato sauce is made next, and ricotta is often stirred into it before the dish is assembled. All the ingredients are then layered in a baking dish with mozzarella as the final layer. The assembled dish is baked in a preheated oven for up to 30 minutes and should be served once it's had at least five minutes of rest. Variations on the basic include adding ground meat, which can be cooked separately or with the sauce, various cooked vegetables, bacon, mushrooms, or using additional or different types of cheese. Baked ziti is typically served as an entrée but can also be a main dish if paired with a salad.

This baked ziti variant is a take on the traditional version. It incorporates a rich meat sauce made with ground beef with aromatic herbs, a splash of red wine, and crushed tomatoes. This robust meat sauce is layered with half-cooked ziti pasta, a mix of shredded and cubed mozzarella, and a touch of Parmigiano-Reggiano cheese.

The following recipe embodies the essence of classic baked ziti, complete with ziti pasta, tomato sauce, and a trio of cheeses. It is put together by Lidia Bastianich, restaurant owner and TV chef, in her book Lidia's Italy in America.
Kosher salt
1 lb (450g) ziti
5 cups (1300g) marinara sauce, homemade or store bought
1 lb (450g) fresh ricotta, drained
9 fresh basil leaves, chopped
1 lb (450g) low-moisture mozzarella, cut into 1/4-inch/0.6cm cubes
1 cup (250g) provola cheese, shredded
Set the oven to preheat to 400°F (200°C).
Cook the ziti in a large pot of salted, boiling water for 10-12 minutes, then drain.
Pour the marinara in a large skillet, then bring it to a simmer and stir in the ricotta and the basil leaves.
To assemble, layer a 10x15-inch (25x37cm) baking dish in the following order: 1/2 cup (130g) of the sauce, half of the ziti, half of the mozzarella cubes and the provolone cubes, two cups (520g) of the sauce, half of the ziti, two cups (520g) of the sauce, the remaining cheese, and 1/2 cup (130g) of the sauce.
Bake for 30 minutes. Take out of the oven and let rest for five minutes before serving.
