Ashley is an American cheese produced in Colorado by MouCo Cheese Company. The cheese is made from cow's milk and it ages from 7 to 8 weeks. During the aging period, the cheese is covered with vegetable ash, resulting in a grey rind.
When young, Ashley has a light and stiff center, but with aging the paste becomes creamy, gooey, and soft. The aromas are clean and rich, while the flavors are bright, fresh, mushroomy, and citrusy. The name of the cheese is a play on words, referring to the fine layer of ash on the rind.
