Introduction & history

Relying more on taste than it does on appearance, the apple cobbler can be prepared quickly, easily, and using the very basic ingredients which can be found in any kitchen. Baked in a deep-dish or, more traditionally, in a cast-iron skillet, this fruit dessert combines juicy autumn apples, usually paired with cinnamon and sugar, and a rough batter or dough made with flour, sugar, baking powder, salt, and either buttermilk or butter. There are two ways to make an apple cobbler: the first method places the sliced and spiced apples on the bottom of a buttered baking dish and the dough or batter on top; the second one suggests pouring the batter into the baking pan first and scattering the apples on top. Other than with customary cinnamon and sugar, apples can be seasoned with honey, molasses, allspice, nutmeg, grated ginger, and even orange or lemon zest. Also, the apples can be pre-baked or even pre-cooked to become slightly softer, which is especially applicable for sour, firm-fleshed ... Read more

Cooking tips

  • apples

Crisp, tart, and firm-fleshed apple varieties, such as Golden Delicious, Granny Smith, Honeycrisp, Rome, and Braeburn, are a great choice for an apple cobbler since they endure baking well without falling apart or becoming floury. The apples should be peeled, de-seeded, and diced or sliced into uniform pieces. Mixing various sorts of apples is more than welcomed, and you can soften them by cooking ... Read more
  • spices and other additions

Needless to say, apples and cinnamon are a perfect match, but why not try seasoning the apples with other spices, such as grounded nutmeg, ginger, allspice, or even pumpkin spice. Lemon juice is often added to prevent the apples from browning, and if you prepare the apples before the dough, simply store them in an air-tight container. For some extra crunch, walnuts, hazelnuts, and pecan nuts can be ... Read more
  • baking

Although the apple cobbler is usually baked in a deep dish, it sometimes overflows. Keep your oven tidy by placing a shallow baking pan under the dish the cobbler is being baked in.
  • dough

To make the dough for an apple cobbler, blend the dry ingredients first and bind them together with buttermilk. Do not over-mix the dough since it will become hard and chewy — just stir until all the ingredients are roughly combined. If you opt for a version with apples on the bottom, apply clumps of dough on top using a large spoon. Do not even it out: the steam will emerge through those tiny holes ... Read more

The main characteristic of this recipe is that the apple cobbler is baked the traditional way — in a cast-iron skillet. Also, in this variant, the apples are scattered on top of the batter and not placed underneath the crust.

Ingredients

8 Servings

Traditional Apple Cobbler

½ cup (115g) unsalted butter

⅔ cup (130g) sugar

⅓ cup (70g) firmly packed light brown sugar

1 cup (120g) all-purpose flour

1 ½ tsp baking powder

½ tsp salt

1 cup (225g) whole buttermilk

1 tsp vanilla extract

¼ tsp almond extract

3 cups (525g) sliced apple, such as Gala

1 tsp ground cinnamon

confectioners' sugar, for garnish

Preparation

Traditional Apple Cobbler

Step 1/5

Dice the butter into small pieces and toss them in a 10-inch (25cm) cast-iron skillet.

Step 2/5

Preheat the oven to 350°F/180°C and place the skillet inside. Wait until the butter melts. Keep an eye on the skillet: the butter should be just melted, not browned.

Step 3/5

Mix the dry ingredients – sugar, brown sugar, flour, baking powder, and salt – in a medium bowl. Next, pour in the liquid ingredients – buttermilk, vanilla, and almond extract. Quickly combine and transfer the batter to the skillet with melted butter.

Step 4/5

Sprinkle the apple slices with ground cinnamon. Place sliced apples on top of the batter, and bake for 30 – 35 minutes until the top becomes golden.

Step 5/5

If you desire, garnish with confectioners’ sugar.
