Relying more on taste than it does on appearance, the apple cobbler can be prepared quickly, easily, and using the very basic ingredients which can be found in any kitchen. Baked in a deep-dish or, more traditionally, in a cast-iron skillet, this fruit dessert combines juicy autumn apples, usually paired with cinnamon and sugar, and a rough batter or dough made with flour, sugar, baking powder, salt, and either buttermilk or butter. There are two ways to make an apple cobbler: the first method places the sliced and spiced apples on the bottom of a buttered baking dish and the dough or batter on top; the second one suggests pouring the batter into the baking pan first and scattering the apples on top. The main characteristic of this recipe is that the apple cobbler is baked the traditional way — in a cast-iron skillet. Also, in this variant, the apples are scattered on top of the batter and not placed underneath the crust.
½ cup (115g) unsalted butter
⅔ cup (130g) sugar
⅓ cup (70g) firmly packed light brown sugar
1 cup (120g) all-purpose flour
1 ½ tsp baking powder
½ tsp salt
1 cup (225g) whole buttermilk
1 tsp vanilla extract
¼ tsp almond extract
3 cups (525g) sliced apple, such as Gala
1 tsp ground cinnamon
confectioners' sugar, for garnish
Dice the butter into small pieces and toss them in a 10-inch (25cm) cast-iron skillet.
Preheat the oven to 350°F/180°C and place the skillet inside. Wait until the butter melts. Keep an eye on the skillet: the butter should be just melted, not browned.
Mix the dry ingredients – sugar, brown sugar, flour, baking powder, and salt – in a medium bowl. Next, pour in the liquid ingredients – buttermilk, vanilla, and almond extract. Quickly combine and transfer the batter to the skillet with melted butter.
Sprinkle the apple slices with ground cinnamon. Place sliced apples on top of the batter, and bake for 30 – 35 minutes until the top becomes golden.
If you desire, garnish with confectioners’ sugar.
