Aloo rasedar is a traditional curry originating from the northern parts of the country. It’s usually made with a combination of tomatoes, potatoes, ginger, hot peppers, amchur (mango powder), garam masala, turmeric, fennel, coriander, cumin, asafoetida, oil, and salt.
